On February 22, 2024, the renowned Michelin Guide hosted an official event at Signiel Busan to launch the "Michelin Guide Seoul & Busan 2024."
The theme, "Luminous Culinary Waves," showcased the first-time inclusion of Busan's selected restaurants alongside those from Seoul.
Since its debut in Seoul in 2016, Michelin had been evaluating Busan's culinary scene, acknowledging its growth potential as a gourmet destination.
Last June, Michelin recognized Busan's outstanding marine environment and unique local cuisine, designating it as the second city in South Korea to be featured in the Michelin Guide after Seoul.
The "Michelin Guide Seoul & Busan 2024" introduced a diverse array of restaurants fairly selected by Michelin inspectors.
These included Michelin-starred establishments offering world-class cuisine, "Bib Gourmand" spots providing excellent food at reasonable prices, restaurants highlighted for sustainable gastronomy with the "Michelin Green Star," and other notable mentions.
Today, STAY 14 will introduce three new Michelin-starred restaurants born in Busan.
1. Mori (Japanese)
"Co-owned by a Korean chef trained in Japan and his Japanese wife, Mori provides beautifully presented authentic Japanese kaiseki dining.
Chef Kim Wan-gyu skillfully prepares delicate dishes using fresh seafood and seasonal produce from Busan, showcasing his remarkable culinary balance and rhythm.
Guests can savor genuine Japanese cuisine in a cozy atmosphere, enhanced by the chef's carefully crafted dishes and his wife's attentive service."

2. Fiotto (Italian)
"Nestled on Dalmaji Hill, Fiotto is a quaint bistro specializing in pasta dishes, managed by a couple.
While their decision to focus solely on pasta initially raises eyebrows, the diverse flavors of their dishes prove to be immensely satisfying.
The chefs prioritize house-made or locally sourced ingredients, including fresh pastas, hams, and vegetables from their family farm, resulting in a distinctive and sustainable dining experience.
Reservations are essential, with only one group served per hour to ensure efficient service."
